Meatless Mondays

Start your week off on a healthy note with Meatless Mondays! It's a proven fact that eating less meat has a protective effect. A study of 500,000 people done by the National Cancer Institute "found that those who ate the most red meat daily were 30 percent more likely to die of any cause during a 10-year period than were those who ate the least amount of red meat."* The benefits of a plant-based diet are numerous; it generally leads to reduced calorie consumption, less fat intake, a lower body weight, and a lower risk of heart disease. Plus eating more plants and less meat can reduce your environmental footprint. And if those reasons aren't enough, plants are just delicious! While we aren't suggesting that all our readers should become vegetarians, we are simply challenging you to try Meatless Mondays--an easy way to put you well on your way to moderate meat consumption for the week. Our special at the store today (Monday, November 2) is Grilled Veggie Sandwich with Kale Pesto. Here's the recipe so you can make it yourself!

Grilled Veggie Sandwich with Kale Pesto


Assorted Grilled Veggies

Zucchini Yellow Squash

Red Peppers

Red Onion Portobello


Fresh Mozzarella- Sliced

Fresh Baby Spinach

7 Grain or Ciabatta

Kale Pesto

1 Bunch Kale

1C Olive Oil

2T Fresh Garlic

3/4C good quality Italian Hard Cheese

Salt and Pepper to taste

1/4C Pine Nuts

Place all ingredients in food processor. Pulse until well blended but not pureed. Season with additional salt and pepper if necessary. Assembly: Spread a generous amount of the Kale Pesto on both sides of bread. Layer with cheese, veggies, and baby spinach. Place on panini grill to heat.
